Well, if you ask me, which, apparently, you did, the food cart is all about serendipity and wonder. It's easy to decide that you want to go to your favorite restaurant, make a reservation, and know you're getting the food you were craving.
In contrast-- Food carts add an element of mystery. You might very well be eating your food 10-20 feet to the right of where you had expected to eat it.
In the extreme case, you hopes could be dashed-- the cart may not be there at all! Food carts add an element of risk.
Food carts -- food made exciting!
